This is a recipe that was given
to me for St Patrick's day, we had it with potato
soup, very good on a cold day to help you warm up.
Ingredients
1 cup all-purpose flour, sifted
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup buttermilk, room temperature
1/4 cup raisins plumped (optional)
Instructions
1. Preheat oven to 375F. Lightly grease a baking sheet.
2. In a large bowl by hand with a spoon, stir together the
flour, baking soda, and salt.
3. Stir in buttermilk and raisins until a dough forms.
4. Turn the dough out onto a lightly floured surface and knead
for 1--2 minutes. It should be soft and malleable but not
overworked.
5. Pat it into a 4-inch dough ball and place on the pan. Cut an
X into the top with a serrated knife. Bake 35-40 minutes or
until golden brown. Cool completely before slicing.
To plump raisin:
Place raisins in a bowl. Pour hot water until raisins are
completely submerged. Let sit 5 minutes or until plumped. Drain
and pat dry before using.
