Coconut-Pecan Drop Cookies

Ingredients
1/4 cup
shortenings
1 egg
1/4 cup butter
1/4 tsp. baking soda
1 cup all-purpose flour
1 tsp. vanilla
1/2 cup sugar
1 cup coconut
1/4 cup packed brown sugar
1 cup chopped pecans
Directions
1. In a mixing bowl beat shortening and butter with an electric
mixer on medium to high speed for 30 seconds. Add about half of
the flour, the sugar, brown sugar, egg, vanilla, and baking
soda. Beat
until thoroughly combined beat in remaining flour. Stir in
coconut and pecans.
2. Drop by rounded teaspoon 2 inches apart onto an ungreased
cookie sheet Bake at 375 F for 8 to 10 minutes or till edges are
golden.
3. Cool cookies on cookie sheet for 1 minute, then remove
cookies and cool on a wire rack. |
