Mary’s Famous Carrot
Cake
Ingredients:
2 tsp. vanilla
2 cups flour
2 tsp. cinnamon
2 cups sugar
1 ½ baking soda
4 eggs
4 cups shredded carrot
1 ½ cups canola oil
Cooking Direction:
Preheat oven to 350 degrees F
- Grate carrots, set aside (food processor
works best)
- Hand mix eggs and add oil. Add dry
ingredients, mix until well combined but do not
over beat. Add grated carrots.
- Spray 3-8 inch cake pans with cooking spray
and line with wax paper (outline pans on the wax
paper and cut out three rounds) Bake cakes for
20-25 minutes, just until done, better a little
underdone than overdone. Cool completely.
Cream Cheese Frosting
Ingredients:
1-8oz.package Cream Cheese (softened) 3
cups Power Sugar
1 stick of Butter (softened)
2 tsp. Vanilla
Chopped Walnuts
Combine cream cheese, butter, vanilla, and
powder sugar beat together and whip until smooth
and creamy. When cool, frost with cream cheese
frosting and top with chopped Walnuts.
