San Fran Pork Chops
4 pork chops (about 1 1/2 lb.; can be boneless)
1 Tbsp. oil
1 minced garlic glove
2 tsp. oil
2 Tbsp. brown sugar
4 Tbsp. dry sherry or broth 1/4 tsp. crushed
4 Tbsp. soy sauce
2 tsp. cornstarch
2 Tbsp. water
Heat large skillet with oil and brown chops on both sides.
Remove; add a little more oil if needed and saute garlic one
minute. Do not burn. Combine in a small bowl oil, sherry/broth,
soy sauce, brown sugar, and red pepper. Put chops back in
skillet and pour sauce over; cover pan. Simmer until done about
30 minutes. Add a little water if needed. Turn chops once.
Remove chops to platter; stir in cornstarch and cook until
thickened. Pour over meat. Serve with noodles.
