 Roasted Red Potatoes with Bacon and Cheese


 

1/2 cup Ranch dressing

1/2 cup Italian five cheese blends

1/4 cup real bacon bits

2lb. small red potatoes, quartered (about 6 cups)

1 Tbsp chopped fresh parsley


 

Preheat oven 350 degrees, Mix dressing, cheese, and bacon bits in large bowl. Add potatoes and toss lightly. Spoon into lightly greased 13 by 9-inch baking dish and cover with foil. Bake 40 minutes. Remove foil. Stir and return to oven; bake another 15 minutes or until tender. When done, sprinkle with parsley and serve. Makes about 8 serving.

Willian Howard Taft, introduce the “seventh inning stretch” while attending a baseball game in Pittsburgh. Taft stood to stretch during the seventh inning. Out respect, the entire crowd got to their feet. The tradition was born.
