Yorkshire Pudding C & O Style
1½ cups flour
salt and pepper to taste
3 eggs
pinch, ground nutmeg
2 ½ cups milk, warmed
3 Tbsp. roast beef drippings
Place flour in a mixing bowl and add eggs. Slowly
add hot milk, stirring constantly to make a smooth
batter. Add salt, and pepper, and nutmeg, and mix
thoroughly. When the roast beef is within 40 minutes
of being done, pour drippings from cooking roast
beef into a heavy skillet and heat well over
medium-high heat. Pour batter into skillet and place
a grill across the skillet and place roast beef over
batter. Allow the drippings of the roast beef to run
through the grill and over the batter. Timing
of this is important. If the roast beef is small, it
should be withdrawn when cooked and the pudding
allowed to remain in oven until done. Cooking time
of this Yorkshire pudding is about 40 minutes in a
400-degree oven.
